While it's too early in the morning for me to link to any research, my guess is that this is based on religious crank theories, which also related to fat to laziness, and laziness with inferiority, etc. etc. I remember reading some things about this but honestly, so much of this is how religion has been manipulated to not only demean but also control BIPOC. That is just another huge, complex and very messy issue.
